Menu Plan Monday, 5/6





You can tell that summer is coming. More and more salads are creeping into the menu. Pretty soon, the entire menu will just be one big salad bar! Ok, maybe not, but it’ll seem like it at times.

Menu Plan for Week of 5/06/2013

Breakfast 
Fruit, granola, cereal, or eggs.

Lunch
Lunch of the week – Salads, leftovers, or jars of soup
Fruit of the week – Apples, oranges, dried fruit, canned fruit, watermelon

Dinner
Monday – Orange chicken over rice
Tuesday – Grilled chicken salad, garlic bread
Wednesday – Sandwiches on the go
Friday – Breakfast for dinner
Saturday – Chili, cornbread
Sunday – Chili and cheese baked potatoes and salads
                                                             
Snacks – Crackers and peanut butter and jam, fruit, yogurt, carrot and celery sticks, or popcorn.

Menu Plan Monday, 4/29





The temperature is rising, and the garden is spent. For many, this time of year is extra busy, filled with planting and tending the garden and planning and enjoying vacations and summer activities. For us, this time on year is our calmest and quietest. Our garden lies fallow for the hot humid summer. Most of our homeschooling activities and commitments take a break for the summer, and it’s too hot to do much more than take a nap in the shade. Hubby and I have a few home improvement projects planned for the next couple of months, but, for the most part, I’ll be taking this time to get my home back in order and to refresh my body and soul. I need it!!

I’ll also be revamping the blog and Etsy store. Hopefully, I’ll be ready with a big reveal in September!

I am very sorry, my dear friends, for not posting much of anything useful these past couple of weeks. I’ve mentioned before that we are in the middle of a very busy season. I wasn’t kidding! Thankfully, a couple of activities are ending soon, and the next couple of months should be a lot quieter and slower. I hope. Unfortunately, when things slow down, I get it into my head that I can once again take on the world. When will I ever learn!?!

Menu Plan Monday, 4/1





It’s Strawberry Picking Time! Yay!! The U-pick fields are finally open! We’ll definitely be enjoying a few strawberry shortcakes this week, and I’m thinking of trying a little homemade strawberry ice cream and strawberry sorbet, too, along with a batch or two of strawberry jam and strawberry-lemonade concentrate.

Usually we pick about 100 quarts or more, but I think we’re going to cut back a bit. We still have plenty of strawberry wine and strawberry mead, and we aren’t going through as much strawberry jam as we used to since we have so many different flavors to choose from these days. I’m pretty sure that 40 quarts will do us this year. I hope that the price hasn’t skyrocketed! The whole reason we hit the U-pick fields is to save money.

If you’re in Florida, be sure to look for some U-pick strawberry fields near you. If you’re not in Florida, don’t forget to check the Pick Your Own website for what might be available in your area.

My Jared turns 14 this week. Where did the time go?! Jared is our youngest so I’m really feeling nostalgic about the passage of time and his growing into a young man. Let’s add in the fact that he’s on a mission trip and won’t even be here on his birthday. You can imagine my melancholy mood. Sigh. They can’t stay little forever, but it really is difficult letting the last one grow up.
