On the first day of Christmas, my true love gave to me…Soft and yummy chocolate chip cookies….
Ok, maybe those aren’t the right words to the song, but they work…sort of…if you change the melody a little….or not.
Anyway, to make up for the fact that my children won’t share the chocolate kisses on their Christmas countdowns, I’ve created a yummy Christmas countdown of my own! Everyday until Christmas I’ll be sharing at least one special recipe that always makes the Christmas season a little more Christmas-y. Some recipes are my own tried and true and some will be heirloom recipes I’ve bribed away from friends with bottles of homemade wine or jars of jam or salsa. My cupboards will be bare, but my blog will be full!
This first recipe might seem like an ordinary chocolate chip cookie recipe, but the honey makes these soft cookies extraordinary!
Soft Chocolate Chip Cookies
Ingredients
2 ½ cup sifted all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2/3 cup butter
1 cup honey
2 eggs
1 teaspoon vanilla
1 12-ounce bag semi-sweet chocolate chips
1 cup chipped walnuts or pecans (optional)
Directions
In a large bowl, combine flour, salt, and baking soda. Set aside.
Beat butter in a mixing bowl with electric mixer on medium to high speed for 30 seconds. Add honey; beat until combined. Add eggs, one at a time, beating till combined after each one. Add vanilla; beat until combined. Beat in flour mixture.
Stir in chocolate chips and nuts until well mixed.
Drop by teaspoonfuls on to ungreased cookie sheet.
Bake in a 350°F oven for 10-12 minutes. Cool on wire racks.
Christmas isn't Christmas without Christmas pudding and Hard sauce. I don't particularly care for the Christmas pudding but most of my family loves it. They won't let me have the hard sauce without the pudding so I have a little pudding with my hard sauce. If you want the recipe (if you don't know it) let me know and I will get it from my mother.
