Seven-Layer Gelatin Dessert


Although this lovely, cool dessert is wonderful during the hot summer, it also takes all day to prepare. I only make it for very special occasions. Because it looks so pretty, it’s great to take to potluck parties. However, make it the day before so the gelatin has plenty of time to set before serving!

Seven-Layer Gelatin Dessert

4 3-ounce packages gelatin, one each of lime, lemon, orange, and cherry
Water
2 envelopes unflavored gelatin
2 cups milk
1 cup sugar
2 teaspoons vanilla
2 cups sour cream

Pour the package of lime gelatin into a small bowl or two-cup measuring cup. Add 1 cup boiling water, stirring until dissolved. Add ½ cup cold water.

Pour lime gelatin into 9 X 13 glass baking dish. Refrigerate until set, about 30 to 45 minutes.

Meanwhile, in a small bowl, dissolve unflavored gelatin in ½ cup cold water. Set aside.

In a medium saucepan, heat milk over medium-low heat until just before boiling. Remove from heat. Add sugar, stirring until dissolved. Add unflavored gelatin mix, vanilla, and sour cream. Mix well with a wire whisk until smooth.

Keep pan warm on a warmer or set in another pan fill with very hot water to prevent the mixture from setting.

When lime gelatin layer has set, pour 1 ½ cups milk mixture over the top of the lime gelatin layer. Refrigerate until set, about 30 to 45 minutes.

Pour the package of lemon gelatin into a small bowl or two-cup measuring cup. Add 1 cup boiling water, stirring until dissolved. Add ½ cup cold water.

Pour lemon gelatin over the set milk mixture layer. Refrigerate until set, about 30 to 45 minutes.

When lemon gelatin layer has set, pour 1 ½ cups milk mixture over the top of the lemon gelatin layer. Refrigerate until set, about 30 to 45 minutes.

Pour the package of orange gelatin into a small bowl or two-cup measuring cup. Add 1 cup boiling water, stirring until dissolved. Add ½ cup cold water.

Pour orange gelatin over the set milk mixture layer. Refrigerate until set, about 30 to 45 minutes.

When orange gelatin layer has set, pour the last of the milk mixture over the top of the orange gelatin layer. Refrigerate until set, about 30 to 45 minutes.

Pour the package of cherry gelatin into a small bowl or two-cup measuring cup. Add 1 cup boiling water, stirring until dissolved. Add ½ cup cold water.

Pour cherry gelatin over the set milk mixture layer. Refrigerate at least 2 hours before cutting and serving.

Notes:

Not a fan of lime, lemon, orange, and cherry? By all means, choose flavors you like! Just remember, the dessert looks its best if you choose compatible colors!

For large gatherings, make this dessert in cups instead of the baking pan. I used to do this for church picnics. No one had to cut and serve anything, just set out the cups for taking.

  2. My mom used to make this and I've been meaning to try this one day, Thank you for the recipe! I have a dumb question though, but wanted to confirm....is the vanilla supposed to be vanilla extract? i just want to make sure. Thanks again.

    2. It came out really nicely! I used Strawberry, Grape, Mango and lime and my hubby and son have been begging to try it already. You're right this takes a little bit of time but its super easy. Just be sure to allow ample time for each layer to set, I broke a chunk in a middle layer but I'm sure no one will notice.
      Ah, if I knew it was this easy I would have done it sooner. I'm sure this will be a hit at the next family barbecue with adults and kids alike. Thanks Betty!
