Menu Plan Monday 1/21



We had so many leftovers last week that two meals moved to this week. Some people have leftover nights planned in their menus. I cannot do that. Unless I make an enormous amount of food, I cannot guarantee that we will have any leftovers. So, instead of counting on them for dinners, leftovers are usually consumed at lunchtime. Last week, the leftovers went a lot further than expected.

About the only time I can count on something left from a meal is when I make roast chicken. I’m pretty sure we are going to have some bones left behind that I can turn into some soup or at least some broth.

For a short time, I would make extra food for dinner on purpose. However, if I didn’t put it away immediately, it would get eaten. We do like to eat around here!

Menu Plan for Week of 1/21/2013

Breakfast 
Fruit, granola, cereal, or eggs.

Lunch
Lunch of the week – Salads, leftovers, or jars of soup
Fruit of the week – Apples, oranges, dried fruit, canned fruit

Dinner
Monday – Baked macaroni and cheese
Tuesday – Grilled smoked sausage sandwiches, salad
Wednesday – Chicken salad sandwiches, salad
Thursday – Hawaiian pork and vegetables over rice
Friday – Rustic cabbage soup, bread
Saturday – Mexican chicken wraps
Sunday – Orange chicken with sweet potatoes
                                                             
Snacks – Crackers and peanut butter and jam, fruit, yogurt, carrot and celery sticks, or popcorn.

  1. It really depends on the meal as to if there will be leftovers. When I make meatloaf, I deliberately make too much since M'honey & M'Sonny like meatloaf sandwiches.. I personally just eat leftover meatloaf..
    Most things we have extra since we were a family of 7... and now just 3 live at home, and I got used to cooking for many.. Sometimes I freeze leftovers and sometimes I just keep serving them every other day or for my lunches till they're gone..
