We had so many leftovers last week that two meals moved to this week. Some people have leftover nights planned in their menus. I cannot do that. Unless I make an enormous amount of food, I cannot guarantee that we will have any leftovers. So, instead of counting on them for dinners, leftovers are usually consumed at lunchtime. Last week, the leftovers went a lot further than expected.
About the only time I can count on something left from a meal is when I make roast chicken. I’m pretty sure we are going to have some bones left behind that I can turn into some soup or at least some broth.
For a short time, I would make extra food for dinner on purpose. However, if I didn’t put it away immediately, it would get eaten. We do like to eat around here!
Do you plan on having leftovers from dinner, or are you surprised when you can make a meal out of what’s left in the fridge?
I pray that you have a blessed week. Be sure to take the time to make your menu for the week. You’ll be less stressed if you do!
